Selecting the correct barrels for one’s wine is an art, a delicate decision made from years of experience working with the vineyard block and the different coopers. Here at Waterford Estate, we choose to barrel ferment our Single Vineyard Chardonnay, this use of the old-world traditional style of Chardonnay production allows the wine to integrate with the oak, forming a harmonised expression of the Helderberg terroir and Stellenbosch Chardonnay. Our Library Collection Chardonnay is a testament to this barrel philosophy, by only using a small percentage of new oak barrels we are able to further express our rich terroir by creating a wine with a textured mouthfeel, vibrant acidity and intriguing citrus notes.
