Wine Stories: Villiera Dak Wijn

Inspired by the many Rivesaltes Ambres and Rancios we tasted from Southern France we decided to try making one ourselves. (In France they are placed outside in demijohns and exposed to all the elements). We used Chenin Blanc and placed ours outside on the Tasting Room roof – hence the name ‘Dak Wijn'. This wine has rich, nutty, savoury characters with hints of caramel and spice.
